My name is Annsley Klehr, and I have been a classroom teacher for almost 10 years, developing and implementing my own curriculum. My passion has always been people, and I found I was most fulfilled when I was creating situations in which people got to experience things through hands-on activities. I thought that I could somehow transfer that passion to another subject – living a gluten-free life. Some Interesting Facts about Me: 1. I am obsessed with Atlanta, GA, my hometown. 2. I love to twirl the curls that hang down from the back of my head. 3. I'm a fatalistic optimist - I think everyone I love is going to disappear, but I seem to be optimistic about it. 4. I collect those engraved pennies at tourist attractions. 5. My favorite food is pizza, (and I really do miss the gluten variety). 6. I have never broken a bone before. 7. I have a scar in my mouth where I got hit in the face with a softball and had to get stitches. 8. I am ALWAYS cold, and I hate to be cold so much that I dislike being wet, and I rarely sit with my feet on the floor; (they are curled up under me). 9. I prefer not to be alone when I sleep. 10. I stand by my morals. After being diagnosed with Celiac Disease in 2007, I slowly came to the decision that I wanted to educate others in a different capacity other than in the classroom. It took 6 long years of progressive symptoms before I got my official diagnosis. I battled doctors who often misdiagnosed me or tried to tell me it was in my head. The frustrations, illness, and anxieties that came along with the undiagnosed disease were so great and so isolating that I wanted to help others create a gluten-free lifestyle with the proper support and education to make informed decisions. After spending time teaching, researching Celiac Disease, working with the National Foundation for Celiac Awareness (NFCA), and having a daughter, I decided to start Gluten Freedoms, LLC to provide a business that would personalize a gluten-free lifestyle plan and educate people about gluten-free dining. When I am not busy with Gluten Freedoms, you might find me spending time with my friends and family, playing outside, hiking, clogging with FiddleKicks, playing tennis, or crafting.
